WINEMAKING: This wine style is produced by harvesting early to create a more pleasant and fresh wine with limited alcohol content; in addition, a part of the wine undergoes special filtration in order to limit alcohol content. The must is immediately separated from the skins, and it is obtained by soft pressing in order to avoid the extraction of the natural pink color of the skins. Fermentation is carried out using selected yeasts and controlled temperature (18°C).
