Cloud90 Sparking Brut

Persistent mousse (foam) characterized by a fine perlage. Pale straw yellow color with greenish hues. Delicate and slightly aromatic bouquet with subtle fruity notes. The palate is smooth, refreshingly crisp, and elegant.

VINEYARDS: Adige Valley and Vallagarina.

WINEMAKING: Sparkling wine produced using the traditional Charmat (tank) method based on Cavit’s sparkling winemaking tradition. Both grape varieties are harvested early to achieve low sugar content, resulting in a low alcohol level – ideal for producing this style of sparkling wine. The grapes are hand-picked. Gentle pressing is followed by a short cold maceration on the skins to extract aromatic components. Fermentation is carried out off the skins (white vinification) at controlled temperatures. After a brief stabilization period, the secondary fermentation (prise de mousse) takes place in large pressurized tanks, where a cuvée of wine and grape must is prepared to naturally achieve a low alcohol level with a slight residual sugar.

Cloud90 Chardonnay

Yellow in color with greenish reflections. A fruity aroma with inviting tropical notes and subtle hints of vanilla. Pleasantly fresh, complex, and well-balanced.

VINEYARDS: Adige Valley and Vallagarina.

WINEMAKING: This particular style is based on an early harvest to create a fresher, more approachable wine with a lower alcohol content. In addition, part of the wine undergoes a special filtration process to further reduce its alcohol level. The classic white winemaking method is followed. After destemming and crushing the grapes, cold maceration (at 10°C / 50°F) of the crushed grapes is carried out for eight hours in contact with the skins before pressing and static decantation.

The must is immediately separated from the skins, and it is obtained by soft pressing in order to avoid the extraction of the natural pink color of the skins. Fermentation is carried out using selected yeasts and controlled temperature (18°C).

WINEMAKING: This wine style is produced by harvesting early to create a more appealing crisp wine with limited alcohol content; in addition, a part of the wine undergoes special filtration in order to limit alcohol content. Vinification is carried out as for white wine and the grape must is obtained by soft pressing in order to avoid extraction of the skins’ natural pink color. Fermentation is conducted using selected yeasts and temperature control (20°C).

Prosecco Rosé

Aromas and flavors of strawberry and raspberry with persistent bubbles and a refreshing finish.

Grapes:
A blend of Glera and Pinot Noir from the hills above Treviso, the traditional growing area for Prosecco. The noble, high quality grape, Pinot Noir must be used with a minimum of 15%

Serving Suggestions:
Easily enjoyed with a variety of dishes. Prosecco Rosé pairs perfectly with anything from fried foods to creamy risotto, chocolate, cheese and even barbecue!

    

VINEYARDS:
Northern Italy just outside the regional capital of Trento.

WINEMAKING:
First the Glera grapes are soft pressed to yield only the best fraction of the must which, after being decanted for 12 hours, goes straight into stainless-steel tanks to be fermented. Fermentation lasts about 15-20 days. When completed, the wine is blended with Pinot Noir that is vinified using the method for red wines in order to give the final blend its characteristic pink color. Once blended, the wine undergoes a second fermentation in temperature-controlled stainless-steel tanks, in order to develop its characteristic perlage and delicate bouquet. The wine is then refined sur lie for 60 days.

Sweet Red

A lusciously sweet red wine with pronounced cherry and raspberry notes. 

GRAPES
50% Merlot, 25% Teroldego, 25% Marzemino

SERVING SUGGESTIONS
Pairs well with red meat dishes and is excellent with spicy foods, along with grilled meats and vegetables. Enjoy chilled.

    

VINEYARDS: Cultivated in vineyards in Vallagrina and Veneto.

WINEMAKING: As the various varieties ripen at different times, they are harvested and vinified separately, with great emphasis being placed on selection of the bunches before crushing.  Alcoholic fermentation is carried out in contact with the skins at a temperature of no higher than 26 °C, with a part of the berries being fermented whole to preserve and enhance their fruity aromas. A part of the must is stored chilled to prevent it from undergoing alcoholic fermentation and is then added to the blend to increase the sugar content.

Prosecco

A fruity fragrance with a slight hint of citrus. Bright, light and subtle with a well-balanced flavor.

Enjoy as an aperitif or with appetizers, seafood, cheeses and nuts. Also, a great pair with cured meats and desserts.

    

VINEYARDS: The foothills surrounding Treviso, between the river Piave and the Venetian Prealps.

WINEMAKING: The grapes are generally harvested from mid-September. The grapes are lightly pressed to produce the free-run must which, after decanting for 10 – 12 hours, is transferred to stainless steel tanks, where it is fermented at 18-20°C for a period of between 15 and 20 days. The wine is then stabilized and clarified before refermentation, which takes place in steel autoclaves at controlled temperatures in order to develop the wine’s characteristic perlage and fragrant bouquet. Refermentation is interrupted by cooling and filtration until the residual sugar content is 18 g/l. Sparkling wines with this sugar content are defined as extra-dry, which is the classic version of Prosecco, and is ideal in achieving the perfect balance between softness to the palate and acidity.

Rosé

With beautiful aromas of fresh strawberry and cherries, this medium-bodied rosé is fresh with flavors of ripe red fruits.

40% Merlot, 40% Marzemino, 20% Teroldego

SERVING SUGGESTIONS
Ideal with all fish dishes, white meat and lighter first courses as well as an apéritif.

  

VINEYARDS: Cultivated in vineyards in the Vallagarina and the Valle dell’Adige, in Trentino within the heart of the Dolomites.

WINEMAKING: After rigorously hand-harvesting, the grapes are pressed and vinified separately at a controlled temperature of 20°C and without maceration in order to minimize the transfer of color from the skins of the grapes.  The wines are then finished for several months in stainless steel tanks in order to maintain their fragrance and freshness. After ageing, Cavit’s oenologists taste the individual wines and determine the proportions of the different varieties that will be used to create the final blend, which is then left to stabilize for a short period prior to bottling.

With Syrah, Cabernet Sauvignon, Merlot and Teroldego, it’s a unique Italian twist on a rich, bold blend.

VINEYARDS: The Teroldego grapes are grown in gravelly soil in the Campo Rotaliano area in a superb micro-climate that enjoys ample daytime sunlight and warmth with chilly evenings. Merlot comes from Trentino’s famed Vallagarina and Valley of the Lakes. The Cabernet Sauvignon comes from the hills of Trentino while the Syrah originates from Central Italy. Lagrein grapes are grown in the alluvial soils of steep hillside (250-350 meter elevations) vineyards north of Trento. The Merlot grapes come from hilly, clay-based soils south of Trento, around the town of Rovereto where the climate is slightly warmer. All three regions are known as prime growing zones for their respective varieties.

WINEMAKING: Each variety is harvested by hand at optimal ripeness and undergoes separate fermentation in stainless steel tanks. Following a refinement period in stainless steel, the lots are blended. The resulting wine is aged in medium-sized oak barrels for 12 months, and then further refined in bottle before release.

ALCOHOL: 13.0%
