VINEYARDS: In Trentino, Merlot has found a particularly favorable environment and has become one of the region’s abundantly cultivated red grapes.

WINEMAKING: Grapes for Cavit Merlot are selected primarily from the vineyards of Trentino’s Valle Lagarina (Lagarina Valley). After a traditional maceration on the skins, the wine is transferred into glass-lined or stainless steel tanks and, in outstanding vintages, is aged in oak barrels.

Cabernet Sauvignon

With distinctive flavors of blackberries, cherries, and plums, it’s aged in oak for one year to produce this medium-bodied wine.

VINEYARDS: Cabernet Sauvignon grapes are harvested in the Atesino Valley in the province of Trentino, in northeast Italy. Conditions here favor cabernet sauvignon, thanks to excellent sun exposure and a longer growing season.

WINEMAKING: Cavit Cabernet Sauvignon is aged in oak for one year to produce a medium-bodied wine with well-delineated fruit, smooth tannins, and a long, graceful finish.

ALCOHOL: 12.5%

Pinot Noir

With a distinctive balance with bright cherry notes and hints of red berries, it is silky, smooth, with a stylish finish.

Grilled or roasted red meats, poultry, flavorful vegetarian entrees, risottos. Enjoy with fish such as salmon, tuna and swordfish.

  

VINEYARDS: Grapes for the Pinot Noir are harvested in hilly areas throughout Provincia di Pavia.

WINEMAKING: The grapes are picked at peak maturity in the second and third weeks of September. Fermentation takes place over 6-8 days under controlled temperatures of 30°C in small stainless steel vats. The wine then is placed in larger oak barrels where it rests on its lees (skins) until release.

Riesling

With aromas and flavors of apricot, peach, and pear, it’s the result of excellent growing conditions along the Italian Dolomite Alps.

VINEYARDS: No other white varietal rivals Riesling’s magical blend of exhilarating aromas, ripe fruit flavors, refreshing acidity and versatile compatibility with food. The cool northern Italian climate in which Cavit’s vineyards are planted provides excellent growing conditions for this beguiling white grape.

WINEMAKING: Cold fermentation, including brief skin contact, is conducted under rigorously controlled conditions in order to facilitate maximum extraction of aromas. Refinement takes place in stainless steel tanks, with early bottling designed to maintain the wine’s naturally fresh bouquet.

Moscato

With delicious notes of apricot, white peach and sage, and a wonderfully refreshing sweetness, it’s a true Italian gem.

VINEYARDS: Cavit Moscato grapes are harvested along the right bank of the Po River in southwestern Lombardy in the province of Pavia, Italy. Here, the landscape of steeply rolling hills comprises limestone and clay-based soil, well-suited to the cultivation of vines.

WINEMAKING: Cavit Moscato benefits from cold fermentation, including brief skin contact, and is refined in stainless steel tanks, with early bottling to maintain its naturally fresh bouquet.

ALCOHOL: 7.5%

Oak Zero Chardonnay

With carefully selected grapes chosen to preserve their bouquet of apple, citrus and tropical fruit, it’s fermented on the skins but never in oak.
