Majestic Pizza

Ingredients

Pizza Dough:

  • 2 cups flour (unbleached)
  • 1 cup warm water (80F)
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 1/3 packet dry yeast
  • 1 tbsp extra virgin olive oil

Toppings:

  • 1/2 minced garlic
  • 8 oz Mozzarella cheese
  • 4 oz feta cheese
  • 4 oz Alpine Swiss cheese
  • 4 oz Fontina cheese
  • 8 oz Shitake mushrooms
  • 4 oz diced artichoke hearts
  • 1 small ripe tomato
  • 12 oz tomato sauce
  • 1 cup balsamic vinegar
  • 1/4 cup virgin olive oil
  • 1/4 cup fresh oregano

Instructions

Pizza Dough:

  1. Combine water, salt, sugar and yeast. Stir until yeast is completely dissolved. Let it sit for 15 minutes, then add olive oil.
  2. Combine liquids in the flour and knead for about 10-15 minutes. You may add flour until you reach the proper consistency.
  3. Coat the dough with a little olive oil and place it in a bowl and covered in a warm area, such as the top of a pre-heated stove. the dough should languish for about 2 hours.

For the Pizza:

  1. Combine the vinegar and sugar and simmer it until it reaches a heavier consistency and set aside.
  2. Combine the garlic, oregano, salt, a little olive oil, the tomato sauce, mushrooms and artichoke hearts.
  3. Preheat oven to 475 degrees and place dough on a pizza stone or tray.
  4. Drizzle the dough with a little olive oil and bake for about 5 minutes.
  5. Ladle on the garlic/mushroom/artichoke/sauce mixture and then add all of the cheeses.
  6. Slice the fresh tomato into thin slices and place on top of the cheese.
  7. Turn heat down to 425 degrees and bake the pizza for about 25-30 minutes, turn off oven and let pizza sit for about 10 minutes.
  8. Remove from oven, slice with pizza wheel and enjoy a very majestic, tasty out-of-this world pizza treat suitable for royalty!
