Ricotta Star

Ingredients

Pizza dough (Makes 4 pizzas)

  • 2 c. bread flour
  • 2c. all purpose flour
  • 2 tsp salt
  • 1 tsp yeast
  • 2 Tablespoons olive oil
  • 1 1/3 cup warm water.
  • Ricotta cheese
  • Parmesan cheese
  • Provolone cheese
  • Mozzarella cheese

Pizza sauce

  • 15 oz crushed tomatoes
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp marjoram
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper & crushed red pepper
  • 1 tsp salt
  • Fresh basil

Instructions

  1. Mix dough and proof overnight in fridge.
  2. Allow to come to room temperature 2 hours before cooking
  3. Sauce: Cook together 20 minutes then cool
  4. Stretch pizza dough to 10-14 inch circle.
  5. Make 3/4 inch cuts at 12 o’clock, 2, 4, 6, 8 and 10
  6. Place tablespoon of ricotta in space between cuts and bring cut edges together to enclose ricotta
  7. Top pizza with sauce, remaining cheeses as desired and fresh basil.
  8. Flour pizza peel well.
  9. Launch onto pizza stone in oven or portable pizza oven outside & cook to desired degree of doneness.
  10. 8-10 minutes on stone in oven
  11. 1-3 minutes in portable outdoor oven
