Mock Peking Duck Pizza on the Grill

Ingredients

  • 3 Boneless Chicken Thighs
  • 5 Spice Powder
  • 4 T Light Soy Sauce
  • 1 tsp Sesame Oil
  • 1 T finely chopped fresh ginger
  • 1 garlic Glove, finely chopped
  • 2 T Chopped Green Onions
  • 2 cups mushrooms, oyster and shitake
  • 2 T of Peanut Oil
  • 1 lb. refrigerated pizza dough or fresh dough purchased from local pizzeria
  • Hoisin Sauce
  • Chopped Green Onions
  • Sliced Seedless Cucumber

Instructions

  1. Add and mix all marinade ingredients.
  2. Cut chicken into small strips. Add to marinade for 2 to 3 hours.
  3. Grill or sauté chicken till just done.
  4. Sauté mushrooms for 3 minutes. Remove from heat.
  5. Roll out pizza dough. Placed on hot grill for 2 to 3 minutes.
  6. Flip over and spread Hoisin Sauce over dough.
  7. Add Chicken and mushrooms to top and close lid for 3/4 minutes. Remove from heat.
  8. Add chopped Green Onions and thinly sliced seedless cucumber.
  9. Slice and Enjoy with Cavit Pinot Noir
