Home made or store bought focaccia bread or pizza dough.
1/2 C fresh mozzarella cheese
1/2 C Gouda cheese
1/2 C Brie cheese
1/2 C Parmigiana-Reggiano cheese(shredded)
2 cups baby Arugula
6 oz prosciutto
4 fresh figs, cut in pieces
4 oz toasted pine nuts
Extra Virgin olive oil
Fresh ground pepper
Instructions
Cut cheeses into small pieces and mix together in a bowl.
If you are using pizza dough, roll or shape on a lightly oiled cookie sheet and bake for about 15-20 minutes, or until lightly browned.
Remove from oven and place cheese on prepared crust and put in oven until cheese melts. If using the focaccia bread you would skip the pre baking of the crust.
After melting the cheeses, start layering the pizza with the Arugula, prosciutto, figs and pine nuts.
Drizzle with olive oil and sprinkle with pepper.
Place the entire pizza back into the oven for 5 minutes. Cut into wedges and enjoy
