Shrimp Cocktail Pizza

Ingredients

  • 1 can refrigerated pizza dough
  • ½ cup olive oil
  • ¼ cup Cavit Pinot Grigio wine
  • 1 cup fennel – cut into strips
  • 1 cup celery – diced
  • 1 cup onion – cut into strips
  • 1 fresh lemon – juiced
  • 2 cloves garlic – minced
  • ½ lb. raw shrimp – peeled, deveined and cut in half
  • 2 tomatoes – sliced in small wedges
  • ¾ cup feta, crumbled
  • ½ cup cocktail sauce
  • ½ cup fresh basil leaves – snipped
  • A small amount of cornmeal

Instructions

  1. Preheat oven 450 degrees
  2. Press out pizza dough and shape to pizza pan using cornmeal. Set aside

To make topping:

  1. Heat olive oil in skillet
  2. When oil is hot add fennel, onion, garlic and celery, sauté about 1 minute
  3. Add lemon juice, wine and shrimp to skillet sauté for 1-2 minutes or until shrimp is pink
  4. Remove shrimp mixture from pan into a bowl with slotted spoon and set aside
  5. Increase heat in skillet and reduce sauce to half
  6. Remove from heat

To assemble pizza:

  1. Brush edges of pizza dough with olive oil, and then spread cocktail sauce out to edge of dough
  2. Spread shrimp mixture out on sauce, arrange tomatoes around and top with feta cheese
  3. Drizzle reduced sauce over topping
  4. Bake for 12-15 minutes until crust is golden brown
  5. Remove from oven and garnish with basil and sprinkle with sea salt and pepper
