Shrimp Pizza Marinara

Ingredients

  • 1 premade pizza shell.. [like Boboli]
  • 1 small onion, thinly sliced
  • 1/2 lb med. shrimp [peeled, cleaned, deveined & halved]
  • 3 green onions cut in small pieces
  • 1 C. marinara sauce
  • 2 Ts. garlic [chopped or minced finely]
  • 3 Ts. olive oil
  • 1/2 C. Parmesan cheese
  • 1 C shredded mozzarella cheese
  • 2 tsps. chopped basil
  • 2 tsps. dried oregano
  • 1/2 C. yellow cornmeal
  • Optional – pepper slices, mushrooms & eggplant [peeled & sliced} if desired

Instructions

  1. Preheat oven to 400degF.
  2. Place pizza stone in oven to warm.
  3. Assemble pizza on wood pizza paddle as follows: {a}Dust paddle with 1/2 of yellow cornmeal.
  4. Place pizza shell on paddle & spread with marinara sauce evenly across top.
  5. Drizzle with 1/2 of the olive oil.
  6. Top with onion slices, shrimp, garlic & green onions.**Here is where you would also add any or all of the optional toppings.
  7. Sprinkle the Parmesan cheese & mozzarella over all.
  8. Drizzle remaining olive oil over the pizza & sprinkle the basil & oregano over all.
  9. Spread the remaining cornmeal over the pizza stone.
  10. Slide loaded pizza carefully onto the pizza stone using the wood paddle.
  11. Let pizza cook until the shrimp are pink & all the cheeses are melted & bubbling.
  12. Carefully remove the pizza from the oven using the wood pizza paddle & cut into 6 slices using a sharp pizza cutter.
