Steak Carpaccio Pizza

Ingredients

  • Pizza dough
  • 2 T of Ground Pignoli mixed with garlic hummus
  • very thinly sliced rare Filet Mignon
  • Baby Spinach
  • shaved aged Reggiano parmigiana large curls
  • Red Pepper
  • cornmeal for rolling out dough
  • handful, Toasted lightly pignoli nuts

Instructions

  1. Roll dough paper thin
  2. brush edges with light olive oil
  3. spread hummus and pignoli paste atop Pizza
  4. use a spritzer for Oil.
  5. bake at 375 degree on Pizza Stone..approx 7 min.
  6. assemble paper thin cut filet mignon into a cone fashion till 16 slices of Pizza are formed
  7. in between slices tuck baby spinach finish with large shaved curls of Parmigiana and sprinkle with red Peppercorns
  8. serve immediately

Notes:

  1. Purchase a 2 lbs of Lilet Mignon season well all sides with black pepper, salt, garlic powder
  2. wrap let sit overnight
  3. preheat oven to 500 degrees place filet on a on a cooking grate so it is distributed evenly by heat
  4. bake for 10 min, remove and let cool
  5. wrap and freeze till ready to use
  6. slice while frozen paper-thin on meat slicer
  7. finish with toasted pignolis nuts
