Balsamic Chicken Pizza

Ingredients

  • 12 oz pizza dough
  • 1 cup roasted red peppers
  • 1 cup red onions, sliced
  • 1/2 cup green peppers
  • 1/2 cup calamata olives
  • 8 fresh basil leaves
  • 12oz grilled chicken
  • 1/2 cup parmigiano reggiano cheese
  • 1/2c mozzerella cheese
  • 1 cup balasamic vinegar
  • 1/2 cup Cavit Pinot Noir
  • Salt and pepper to taste

Instructions

  1. Set at 375 for a nice home for the pizza to bake in
  2. Bake pizza dough accordingly depending on the directions that come with it
  3. In a saute pan with 2oz of olive oil, sweat all vegestables ultil they are translucent which takes about 15minutes
  4. Add balsamic and wine and let reduce for about 9 minutes
  5. Next grill 12oz of chicken breasts till cooked throughly
  6. About 7min on each side.Set aside, and take cooked dough and brush some olive oil on top
  7. Take all veggies aand spread all over pizza, sprinkle basil leavs and a pinch of salt and pepper
  8. Take grilled chicken and spread all over the pizza
  9. Take both cheeses and sprinkle over entire pizza
  10. Next (the best part!), put the pizza right on the rack and bake until crust is crispy and cheese is melted which takes about 15min
  11. Slice and serve with a glass of Cavit Pinot Noir Chilled together its amazing
