Banging Grape and Wine Flavored Pizza

Ingredients

Dough – Make dough or just buy a dough and cook it with oil on top….

  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water
  • 1 teaspoon white sugar
  • 2 1/2 cups bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Pizza topping

  • 1 cup Cavit Merlot Wine
  • ¼ lb prosciutto cut into strips
  • 1 tbsp sugar
  • 2 tbsp freshly cut-up basil (just cut with scissors)
  • 1½ cups red seedless grapes, half them lengthwise
  • 6 oz fontina, cheese  diced for topping (1 cup)
  • 2 oz Gorgonzola cheese – crumbled
  • ½ tsp ground black pepper

Instructions

  1. Preheat oven to 450 degrees. In a bowl, dissolve yeast and sugar in warm water. Let stand until creamy. This should take around 10 minutes.
  2. Stir in salt, flour and oil. Beat until smooth. Let stand for 5 minutes.
    Turn dough out onto a lightly floured surface and pat into a round pizza like object. Transfer crust to a lightly greased pizza pan or dusted with cornmeal.
  3. Bring Cavit merlot wine with sugar to a boil in a small heavy saucepan over moderate heat, stirring until sugar is dissolved, then boil, uncovered, until reduced to about 1 tablespoon, about 5 minutes. Add grapes to saucepan and stir gently to coat with syrup, then transfer to a bowl. Add cheeses and pepper to bowl, then stir to combine.
  4. Assemble on top of pizza with fresh basil and prosciutto leaving a 1-inch border.
  5. Bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.
