Cajun Jambalaya Pizza

Ingredients

  • 1 tsp. olive oil, plus additional to brush crust
  • 3 slices Applewood smoked bacon
  • 1 medium onion, chopped
  • 1/2 C celery, chopped
  • 1 T fresh garlic, minced
  • 1/2 green bell pepper, cored, seeded and chopped
  • 1 C cooked, cubed chicken breast
  • 1/2 C diced Andouille sausage
  • 1 C cooked, cubed ham
  • 1 C cooked, chopped shrimp
  • 1 C fresh chopped tomato
  • 1/2 C tomato sauce
  • 1 T Cajun seasoning
  • 1 16 oz pkg. fresh pizza dough (from the bakery dept. of your grocery store), rolled out to 12″ and placed on a pizza baking pan
  • 2 T Italian parsley, chopped
  • 1/4 C chopped scallions

Instructions

  1. In a 12″ skillet heat oil over medium heat and fry bacon until crisp. Remove and crumble, then set aside.
  2. To same skillet, add onion, celery, garlic and green pepper. Sauté 4 minutes.
  3. Add bacon and remaining ingredients through Cajun seasoning.
  4. Stir to combine.
  5. Cook on medium heat 5 minutes.
  6. Spread on crust and brush additional olive oil on crust edges and bake in a preheated 425 degree oven for 15 minutes or until crust lightly browned.
  7. Remove and top with parsley and scallions.
  8. Cut into 8 pieces and serve.
