Eatalian Pizza

Ingredients

12-inch cast iron pan

  • 1-3/4-2 cups pizza flour
  • 1 package instant pizza yeast
  • 1-1/2 tsp sugar
  • 3/4 tsp salt
  • 2/3 c very warm water
  • 3 Tblsp oil
  • Pizza sauce
  • 1/2 pkg sliced pepperoni
  • 1/2 tsp dried Italian seasoning
  • 8 ounces Mozzarella cheese
  • Crushed red pepper (optional)

Instructions

Preheat oven to 500°

To make dough:

  1. Combine 1 c flour, packet of pizza crust yeast, sugar and salt in a large bowl.
  2. Add water and oil.
  3. Mix well until blended, about 1 min.
  4. Gradually add more flour until soft dough ball is formed. Dough will be slightly sticky.
  5. Knead on a floured surface, adding additional flour if needed, until smooth and elastic (about 4 minutes).
  6. With floured hands and/or a rolling pin, stretch/roll dough to a 12-inch circle.
  7. Place a dinner plate, upside down, on dough to create a perfect circle & trim excess dough.
  8. Heat cast iron skillet on stovetop over medium heat.
  9. Add 2-3 Tblsp olive oil to bottom of skillet (enough to cover pan)
  10. Place dough in pan. You’ll see it bubble up in a few minutes. Use spatula to check bottom for a light golden crust.
  11. Flip crust over with spatula and remove from stovetop.
  12. Add pizza sauce to the edges, followed by mozzarella, then pepperonis.
  13. Sprinkle dried Italian seasoning and grated parm over pizza.
  14. Transfer to hot oven for 2-3 minutes.
  15. Carefully remove from the oven, and slide pizza from pan to cutting board to cool
  16. Slice & serve
