PANEER: Boil milk in a pan. Turn off the stove, add lemon juice. Stir until the milk curdles. Pour mixture into cheese cloth and squeeze cloth to get rid of liquid.
CRUST: Knead dough ingredients until soft dough is formed. Heat a 12” iron skillet on a medium heat & spray it with cooking spray. Flatten the dough evenly into a 12” circle. Put it on the skillet; Cover it with the lid. After 7 mins bottom crust will have brown patches. Turn crust over & cook for 7 mins more.
SAUCE: Heat oil in a skillet on medium heat. Mix sauce ingredients in the blender to puree. Add puree to skillet & let it simmer for 8 mins. Puree thickens. Set aside 2 tbsp of sauce & spread rest on crust.
BROIL: Heat oven to broil. Sprinkle mozzarella and goat cheese over the sauce. Spread all topping with paneer on pizza. Switch off the stove & place the skillet in the oven until the cheese & toppings start to brown. After broiling, garnish pizza with ingredients.
