Seafood Pizza with Wine Sauce

Ingredients

Dough:

  • 2 tsp active yeast
  • 1 cup warm water
  • 3 cups all-purpose flour
  • 1 Tbs sugar
  • 1 tsp salt
  • 1 Tbs olive oil

Sauce:

  • 1/2 cup shredded jarlesberg swiss cheese
  • 1/2 cup heavy cream
  • 1/2 cup pinot grigio
  • 2 Tbs flour
  • 4 Tbs butter

Topping:

  • 12 uncooked medium shrimp
  • 1/2 lb bay scallops
  • 1 cup shredded mozzarella cheese
  • 1 romanno tomato thinly sliced
  • 1/2 cup sliced shallots
  • 1/2 cup chopped fresh basil leaves

Instructions

For the Dough:

  1. in large mixing bowl, dissolve yeast in warm water, let stand 5 min until activated
  2. add all ingredients, kneed until dough forms a soft and sticky ball
  3. let dough stand in a covered/oiled bowl for 1-2 hours, until dough has doubled
  4. roll out on floured surface

For the sauce:

  1. melt butter in sauce pan on low heat
  2. add flour, stir until browned
  3. add cream and whisk until smooth
  4. add cheese and whisk until melted
  5. remove from heat
  6. add wine and stir until blended

To assemble:

  1. spread a thin layer of sauce on rolled out dough
  2. lay on tomato slices
  3. spread shrimp, scallops, and shallots
  4. add more sauce, top with mozzarella
  5. bake at 425 until crust browns
  6. sprinkle with basil leaves
