Smoked & Spiced Charcuterie Pizza with White Wine Sauce

Ingredients

  • 1 tbsp butter
  • 1 tbsp flour
  • 3 garlic cloves, minced
  • ½ cup Cavit Oak Zero Chardonnay
  • ½ cup whole milk
  • ¾ cup grated Parmesan cheese
  • 16 oz pizza dough
  • olive oil, for brushing
  • 12 slices salami, chopped
  • 4 slices smoked ham, chopped
  • 1 large tomato, thinly sliced
  • ½ cup mixed olives, black and green, sliced
  • ¼ cup pepperoncini peppers, chopped
  • 1 cup smoked mozzarella cheese, shredded
  • ½ cup provolone cheese, shredded
  • 2 tbsp fresh basil leaves, chopped
  • hot sauce, to taste, if desired

Instructions

  1. Preheat oven to 450.
  2. In a small saucepan melt butter over medium low heat. Add the flour and cook for 2 minutes. Add the garlic and stir for 1 minute or until fragrant. Add wine and milk and stir for 2 minutes or until thickened. Remove from the heat and stir in the Parmesan cheese. Cover and set aside.
  3. Roll out pizza dough into a rectangle shape and place on a pizza pan. Brush the outer 1” of dough with olive oil.
  4. Spread the wine sauce on pizza dough. Top with salami, smoked ham, tomato slices, olives, peppers and cheeses. Bake for 10 minutes or until crust is golden brown and cheese is bubbling.
  5. Sprinkle with chopped basil leaves and drizzle with hot sauce.
  6. Serves 4
