Smokey White Bacon Balsamic Pesto Pizza

Ingredients

Dough:

  • 5-6 cups pizza flour
  • 1 Tablespoon sugar or honey
  • 1 packet active dry yeast
  • 1 Tablespoon salt
  • 2 Tablespoon olive oil
  • 2 cups warm water

Pesto:

  • 2 Cups fresh packed basil
  • 2 garlic cloves
  • 1/4 Cups pine nuts toasted
  • 1/2- 2/3 Cups olive oil
  • 1/2 Cups grated pecorino Romano cheese
  • Salt and pepper to taste

Pizza:

  • 2-3 Tablespoons olive oil
  • 8 ounces whole milk ricotta cheese, seasoned with 1 teaspoon salt and 1/4 teaspoon pepper
  • 1/4-1/3 cups pesto
  • 4 ounces smoked mozzarella
  • 4 -6 ounces whole milk mozzarella
  • 3 strips thick cut bacon, cooked and chopped into bite size bits
  • Balsamic glaze

Instructions

To make dough:

  1. Dissolve sugar, yeast and salt in water. Add olive oil.
  2. Add 5 cups flour to make soft dough, add more as necessary.
  3. Knead dough until smooth and elastic (8-10 minutes ).
  4. Place dough in an oiled bowl cover and let rise in a warm place for 2 hours.
  5. When ready to make pizza gently deflate dough and divide into 3 dough balls. Let rest 15 minutes.

To make Pesto:

  1. Put basil, garlic, pine nuts in food processor and pulse until roughly chopped.
  2. With processor running add olive pile in a stream to make a sauce.
  3. Add in cheese and process briefly to combine. Season with salt and pepper

To make the pizza:

  1. Pre heat pizza stone in oven at 500 degrees for an hour.
  2. Stretch dough to fit pizza stone.
  3. Brush olive oil on dough.
  4. Spread ricotta cheese over dough.
  5. Swirl pesto over ricotta.
  6. Sprinkle both cheeses over pizza.
  7. Sprinkle bacon on top.
  8. Slide onto pizza stone and bake 10-12 minutes.
  9. Remove from oven and drizzle balsamic glaze on top. Enjoy!!
